This fully washed Guji comes from the Shakiso area where 310 smallholder producers have perfected the art of clean, bright washed processing. The washing station is equipped with modern eco-pulpers and a multi-channel fermentation system that allows for precise control. After selective hand picking, cherries are de-pulped within six hours of harvest and fermented for 24 – 36 hours depending on ambient temperatures. The beans are then washed through three separate channels to remove any remaining mucilage before moving to the raised beds where they dry slowly over 10 – 14 days. What makes this coffee so special is its clarity and perceived body. the clean processing reveals the inherent character of Guji's terroir - floral aromatics, stone fruit sweetness and sparking citrus acidity.
